This week... The Perfect Busy Girls' Dinner Party ...
Ok, so dinner parties are a bit 1980's, but you've got to admit, there's nothing nicer than having friends over for dinner - a bit of wine, some lovely food, gossip & giggling - great stuff.
There's only one problem - when it's your turn, what the hell do you cook?
Thank goodness for The Busy Girls Guide - inspiration in a can - just look & cook!...
2. Drain when cooked & mash with Greek yoghurt & dash of butter. Add spring onions when mashed & put to one side
3. Cover & cook the peas with a little water, in the microwave for 3 minutes.
4. Drain & whizz the peas, oil, lemon juice & tarragon in the food processor for 20 seconds & put to one side
5. Brush the lamb with olive oil & salt & pepper & fry in a pan for 4 mins each side until done to your liking.
6. To serve heap some of the potato in the centre of the plate, topped with a drizzle of the pea mix & gently rest the lamb cutlet on top. Add rocket to the side of the plate for decoration... voila!
Chocolate Souffle - takes 5 mins to prepare plus 20 mins to cook
Serves 4-6. Needs: 150g dark cooking chocolate, 80ml single cream, 30g cocoa powder, 6 medium egg whites, 110g caster sugar. Electric whisk, 6 ramekins (little pots), oven
What to do...
1. Preheat the oven to 180deg. Brush a little butter inside 6 little ramekins & put on one side
2. Melt the chocolate, cream & cocoa in a pan on a low heat, stir til smooth, put to one side.
3. Whisk the egg whites with an electric whisk until soft peaks form then add the sugar gradually until thick & glossy.
4. Fold the egg white mixture into the chocolate bit by bit & spoon into the ramekins
5. Bake for 20 minutes or until the souffles are puffed up & set
6. Serve straight away

Perfect wine for lamb... The perfect wine with lamb is Red Bordeaux - we would recomend you select a Medoc.
Chilean Reds would also work& Rioja is always a good choice.
