Even if Jean Christophe Novelli isn't a family friend, don't you worry - we can still help you to create a great dish which will impress your friends. We've stuck with the Mexican theme - & have found something we know your guests will be totally wowed by. Have fun!
Stunning starter - Scallop Margaritas
Shopping List - nearest supermarket
Cost - approx £15.79
Buy yourself about 8 fresh scallops (about £5.00)- ask the fishmonger to clean them out for you, but keep the shells. Then get a 375ml bottle of Tequila (about £10.00) & a 250ml bottle of Jif lime juice (79p)
Boil 230ml (1 cup) of the Tequila for 10 minutes, then leave in the fridge to cool. When it's chilled add the same amount of lime juice (1 cup) & a little salt & pepper.
Cut the scallop flesh into small cubes (Oxo cube size) & put them into a bowl - cover with the Tequila mix & leave for 5 minutes. Serve in a margarita glass.
Busy Tip - if you need to get ready before they come, this dish can be prepared in the afternoon & simply left in the fridge until you're ready to serve it. The spare tequila can also be used for shots later, if you're feeling a little naughty!
