Quick oriental sitr fry

"Dear Busy Girls Guide. I loved your guide to peas and broccoli! I didn’t realize they were so good for you. I'm not the best cook but wondered if you have any other easy winter recipes that I can do next week as I feel quite inspired now! Thanks Janey, Manchester"

Dear Janey

Oh, we've lots of recipes up our sleeve for this winter... we've passed your email onto our resident Busy Nutritionist Julie - here's her quick reply...

Glad you liked the pes recipe. even though green vegetables are great for health & vitality they may not inspire the taste buds too much so I've given you a couple of recipes using more colourful vegetables to make a quick, simple & enjoyable meal.

Recipe 1... Oriental Stir Fry

What you need

Brocolli florets cut into bitsize pieces
Peas - fresh or frozen
A bag of pre-packed stir fry veg or any of the following:

Red cabbage finely cut
carrot cut into slivers
red pepper cut into matchsticks
beansprouts
onion or leek - sliced

Root ginger - peeled & grated
Chinese 5 spice (comes in a bottle ready mixed)
garlic (optional)
Tamari (wheat-free soya sauce) or shoyu (organic soya sauce)

Add protein such as chicken pieces or rainbow trout, or if you 're a vegetarian try tofu or adzuki beans.

What to do

Stir fry all the ingredients in either olive oil or toasted sesame oil (for a nuttier flavour) for around 5 - 10 mins

Top Tip For a healthier way to add a small amount of water instead of oil & stir fry at a lower temperature

Serve the stir fry with rice or noodles.

Top Tip Asda sell pre-cooked rice noodles (in the vegetable section) that only need stir frying for a couple of minutes.

Recipe number 2 Butternut Squash Soup
