Busy Mozzarella Chicken
preparation time = 3mins
cooking time = 20mins
What you need
- 2 pieces of chicken
- 2 slices of Mozzarella cheese
- handful of sundried tomatoes
- handful of bazil
- bag of salad
- New Potatoes
What to do
1. Put the oven on at 200degC
2. Cut the New Potatoes into 2 and boil on the hob until soft but not crumbly.
3. Cut a slit into the chicken breast & stuff with pieces of sundried tomato, bazil leaves & mozzarella cheese. Wrap the chicken in tin-foil & place on a baking tray. Put the chicken in the oven.
4. When the potatoes are done, drain & toss in butter & mint.
5. The chicken will take about 15mins, you'll know it's done when it is no longer pink.
6. Serve with salad & new potatoes... delicious!
Top Tip:
When you want to cook and eat quickly, your best bet is to cook nutrient dense foods (like steamed vegetables, whole-grain breads & cereals, rice, beans, pasta & fruits) that give you more nutrition per minute.
